Inalca SpA / Ultrocchi Carni SpA


In Italy MPS realised two large complete cattle slaughterhouses for the Italian Gruppo Cremonini in 1996 and 1999.
Both companies, Inalca and Ultrocchi, near Modena, now belong to the absolute top in Europe.


Top capacity

The lines are designed for the highest capacity in their sectors and are also suitable for slaughtering calves. Each line has a slaughter capacity of 150 cattle per hour.

In total Inalca can slaughter 5500 cattle per week.
For both lines of Inalca and ULTROCCHI this means 550.000 cattle per year.

Fast start up

One of the two new is a complete new cattle slaugtherline that is built as an extension onto the head office of Inalca SpA at Castelvetro.
This line was successfully put into use in September 1996 within one week.

The other slaughterline of Gruppo Cremonini was realised in the completely new site of Ultrocchi Carni SpA at Ospedaletto Lodigiano, situated 60 Km from Milano, directly left on the A1 Milano - Bologna.
This line was successfully commissioned within one week and fully operational in May 1999.

Traceability

At Inalca / ULTROCCHI traceability has been totally integrated in the production chain.

From farm to the slaughter process, at the cooling and to the cutting/processing of the meat. All is totally traceable per animal.

ULTROCCHI has a newly developed system for automatic vertical boning of cattle parts. Here meat parts are boned quickly, ergonomically and hygienically.

The product remains guaranteed traceable during the whole boning process.


Modern lines with carrousel processing

The two MPS cattle slaughterlines each have a long buffer raceway, where the cattle are taken in-line into two cattle boxes. Fast hoisting winches and conveyors take the cattle to the separate bleeding stations. The blood is caught by a hollow knife system.

The carcass is then passed on in a straight line by way of the electro stimulation to the pre-hiding with lift platforms and then along two Gorilla dehiders.

After that a paunch removal carrousel with lift platforms where paunches slip into a chute under the carcass into a stainless steel tray conveyor.

The sawing takes place with two automatic DAMOCLES cattle saws.

Futher on the half carcasses, the white and the red organs, are synchronously offered for inspection and then pass on via the rapid chill tunnel into the automatic chillers. The half carcasses will be completely boned in the cutting room the next day.

Inalca is the largest hamburger producer of Italy with a yearly production of 20.000 tons of hamburgers.

Inalca supplies mainly large chains, such as Mc.Donalds, Unilever and Nestlé.

All other beef products are sold worldwide as packed fresh or sliced meat, vacuum packed and cooled or deep frozen.

Inalca / ULTROCCHI has the USDA and EC approval.
